This slow cooker beef stew recipe is a hearty blend of flavorful stew meat and vegetables. The seasonings seep into the meat and veggies while they cook over 7 to 8 hours leaving you with a rich and filling meal that everyone will love. Yep, this slow cooker beef stew recipe is one way to get your little ones to try (and hopefully gobble up) some vegetables.

A huge bonus with this delicious slow cooker beef stew recipe is that it creates enough for leftovers which make for a perfect lunch whether you’re at home or at the office!

INGREDIENTS

1 ½ lb. stew meat
1 cup water
1 cup beef broth
1 large onion
3 large potatoes
1 lb. baby carrots
1 ½ cups green beans
3 cloves garlic, crushed
1-6 oz. can tomato paste
½ tsp. salt
1 tsp. pepper
¾ tsp. oregano
nonstick spray

DIRECTIONS

1. Spray the slow cooker liberally with nonstick spray or rub with vegetable oil.

2. Place stew meat in the bottom of the slow cooker.

3. Add water, broth, tomato paste, salt, pepper, garlic, and oregano.

4. Cube potatoes into large pieces.

5. Chop onion. Note: I prefer large pieces but any size will work.

6. Stir in potatoes and onions.

8. Cook on low 7-8 hours.

    Your recipes sound delicious, however, without nutrition values listed I am unable to use them. In my case, I definitely need to know sodium content, since I am on a restricted sodium diet of 1500 per day. Thank you.

      You can just look at the sodium content on the labels of the ingredients that go in this, and tweak it a bit if you need to. That’s what I do with recipes all the time. I also use the My Fitness Pal app (they also have a website if apps aren’t your thing) sometimes to look up the nutritional information of ingredients and that helps a lot.

      I bet you can make it in the oven or on the stove top, but I honestly don’t know at what temperature because I use the slow cooker. I recommend checking a site like Allrecipes.com for suggestions. Hope that helps, Tara. 🙂

    It would be most helpful if you would also post the number of servings for each recipe. What one considers a enough to serve a large family may be different for others. =)

        This helps me as my family still at home is 8 and 6 are males 4 are teenagers. And when I have veryone here it is 15 people all but 4 are men. This helps me to know to either add a little or double the recepies. I appreciate your hard work in getting recepies for large families.

    I make beef stew every few weeks and my mom’s recipe is almost the same as yours but we add a bit of red wine. Its great, and cheaper cuts of meat, which might not be the most tender, cook great in a slow cooker.
    keep the great meal ides coming.
