I am so excited to share myLow Carb Shortbread Cookies – Keto Friendly Recipe I just made! Guys, you can have cookies on the Keto Diet!!! Shortbread cookies are my absolute favorite! These cookies have the same texture and the same buttery flavor!!! They pretty much melt in my mouth!

I used to top my shortbread cookies with a light vanilla frosting. I haven’t attempted anything that technical on the keto plan yet but if I do I will be sure to let you know. I feel like I am open to a new world of possibilities when cooking and baking keto style!

I’m so excited to try new recipes I can hardly contain myself! Wanna know the best part??!! I get to make all the mistakes and you guys only get the final recipe! I will show photos of our failures though. For example, we tried this exact recipe with coconut flour and that’s a big no-no. It was a mess and the ingredients never came together. We even added cream cheese and sour cream. We wasted so many ingredients testing different flours on this one. See our failure photo at the very bottom of this post.

Let me tell you how to make these low carb shortbread cookies! It only takes four ingredients and about 15 minutes to whip up the dough! You will need some cookie cutters and a rolling pin though. These cookies bake best if they are rolled out.

  • 2 1/2 cups Almond Flour
  • 6 tablespoons softened butter
  • 1/2 cup powdered stevia (or sweetener of your choice)
  • 1 teaspoon vanilla

Low Carb Shortbread Cookies Instructions

Preheat the oven to 350 degrees F.

Use a mixer and whip the butter and sugar substitute together until it becomes light and fluffy. This step is important.

Now add the vanilla and mix it together.

Slowly add 1 cup of almond flour at a time combining it together as you go.

When you are done mixing it the dough will look crumbly but when you pick it up and squeeze it together with your hands it will stick together nicely.

Roll out the dough between two sheets of waxpaper to avoid sticking. I like to roll them out to about 1/3 inch thick. You can make them as thin as you want them. This dough recipe will not flatten when it cooks. It will hold it’s shape.

Bake these cookies for about 12 minutes on the top rack. If you do roll the cookies thinner you will want to bake them at a shorter timeframe. They may only take between 8 and 10 minutes if they are really thin. I personally prefer these cookies a bit thicker. They are delicate cookies and easier to handle when they are thicker.

Allow these cookies to completely cool before you pick them up. They will harden up after they cool down.
