My dad is the most generous, giving person I know. One of the way he openly gives and shows his big heart is feeding people. Food is the key to the heart, after all. Whenever he has someone over visit his home, he jumps up and tries to find something he can feed them. I wanted to treat him with a brand new fridge this Father’s Day! My parents fridge was overheating and their ice maker had been broken repeatedly for years, it was clearly hanging on the edge at the end of it’s life. When I surprised my dad with the news of what I was planning, he was totally shocked, and so incredibly excited!
After spoiling my dad to a new fridge, he turned it around on me and made hisabsolutely favorite pie to share! This pie has become a family tradition, and a recipe we hold dear. Every Christmas, my parents will whip up a dozen or so of this amazing frozen chocolate pie recipe and give out a pie to their friends as a gift. Everyone loves this creamy, decadent, chocolate mousse like pie!
Frozen Chocolate Pie
Ingredients:
- 6 oz (1 cup) Semi-sweet chocolate chips
- 1 cup Powdered sugar
- 1/2 cup Butter, softened
- 1 tsp Vanilla
- 4 eggs
- 9-inch graham cracker pie shell
Directions:
Melt chocolate chips bymicrowaving the chips in a microwave safe dish at 50% heat. Start with 45 seconds, and then stir and continue heating in 15 second intervals until the chocolate is smooth and melted. Do not over cook.
In a separate bowl, blend together powdered sugar and soft butter until creamy and smooth. Add vanilla and chocolate and combine again.
Crack one egg into the pie mixture at a time blending until smooth.
Pour the mixture into a 9-inch graham cracker pie shell. Freeze overnight, setting the pie on a level surface in your freezer.
