Very rarely do I have the time to plan out a costume and dress up, so instead I focus on entertaining and cooking with Halloween in mind. For this Earl Grey Marshmallows recipe, I decided to eschew the traditional orange and black theme and instead go for a romantic, gothic vibe… and the results are oh-so-enticing! In fact, I dare you to eat only one of these marshmallows. Topped with edible glitter and swirled with black food coloring, these morsels are the perfect ‘adult’ treat for Halloween — and are made with less sugar thanks to Truvia.

If you’ve ever made marshmallows before, you know that these cuties require a lot of sugar. Ever on the search for sneaky ways to reduce my calories, I swapped in Truvia Cane Sugar Blend in place of sugar. Because it’s blended with stevia leaf extract and sugar, itprovided the perfect sweetness for this recipe, but with 75% fewer calories per serving than sugar. To make these marshmallows extra fun, I also added a bit of Earl Grey tea for a taste that’s a bit citrusy and herbal. To brighten up the flavor even more, I also added in some lemon zest and vanilla extract. I love this combination of sweet, citrus, and vanilla!

Instructions

  • Coat a high-sided baking dish with cooking spring, then line with parchment paper. Spray the parchment paper with the cooking spray and set aside. Pour cold water into the bowl of an electric mixer and pour the gelatin on top and let it sit for about 5 minutes.

  • Heat a saucepan over medium heat and add Truvia Cane Sugar Blend, Truvia Nectar, salt, vanilla extract, and Earl Grey tea. Stir until everything is well-combined, then bring to a boil. Keep cooking until it has reached 238 degrees on a candy thermometer, about 5 minutes.

  • Remove the saucepan from heat. Put the mixer on the lowest speed with a whisk attachment and whisk the gelatin mixture. Slowly pour the syrup in (to avoid splattering, stream it down the side of the bowl). Add in vanilla extract, loose Earl Grey tea, and lemon zest. Beat the mixture until it is thick, white, and tripled in volume, about 12 minutes.

  • Pour the mixture into the lined baking dish and spread with a spatula to be level. To get the black swirl, slowly drizzle the food coloring across the top. Then poke a toothpick into the coloring and swirl. Keep swirling until it is fully mixed in. Spring the top of the marshmallows with edible glitter and sprinkles.

  • Let stand at room temperature at least 4 hours or until firm. Cut into squares to serve. The marshmallows can be stored in an airtight container at room temperature for a week.

This will be my second Halloween in the house since I bought it. Last year I was soooo excited to hand out candy to trick-or-treaters and went way overboard buying candy. Turns out, I only had one trick-or-treater. ONE. This year, I’ll be buying accordingly… but mostly just hanging out with friends and sharing these earl grey marshmallows!
